Harvest Eggnog (dairy free)

Who else loves holiday treats and the simple pleasure of tastes which ignite childhood memories? I found myself nostalgic for some eggnog but couldn’t get myself to buy it from the store because of all the added sugar. I decided to get a little clever and see what else I could come up. I wanted a recipe that would keep the classic creamy eggnog texture without all the sugar. The recipe below does just the trick while maintaining a hint of sweetness! Enjoy 

 

Ingredients:

  • 6 organic eggs, separated

  • 2-3 Tbsp maple syrup

  • 1.5 cups nut milk

  • 1 cup canned coconut milk (full fat will lead to creamier results)

  • 1 Tbsp vanilla extract

  • Several dashes of nutmeg, cardamom and cinnamon (more cinnamon recommended)

  1. Beat egg white for up to 2 minutes on high speed (I used a Nutribullet) 

  2. Separately whisk egg yolk and maple syrup (an electric hand whisker worked great)

  3. Slowly whisk nut milk into egg yolks

  4. Add coconut milk while continuing to whisk

  5. Add vanilla & spices

  6. Lately, add egg whites and blend untill it is a creamy, smooth texture

  7. Refrigerate overnight or until desired temperature

  8. Blend prior to serving for extra froth!
